Winemaking was founded by Roberto Cipresso in 1998. He wanted to bring together, in one place, professionals who could provide effective input on the entire winemaking process from vine to wine. The mission of Winemaking is to value the "terroir" and passionately embrace old and new, research and archeaology. Winemaking also believes that every action in the field or cellar is part of a constantly growing legacy of knowledge that should be documented each year. This knowledge gives added value to wine and is an asset for company growth. It is a formula for future success and achieving "total quality".

Winemaking's Philosophy and Work Method is to

We work with our clients alongside architects, artisians, and other experts to determine the ideal conditions in which their wine can develop, grow, and mature. We do this a way that is sensitive and respectful of the natural environment and particular setting.

Caterina Belviso

 

Caterina Belviso was born in Rome where she graduated from the Istituto Tecnico Commerciale G. D'Annunzio.
She moved to Montalcino where she initially worked in real estate.
She began working in the wine sector in 2000 at Il Greppo, Biondi Santi, and later Poggio Antico. She has been an administrator with Winemaking since 2001.



Roberto Cipresso

 

Roberto Cipresso, native from Bassano del Grappa, starts his winemaking career in 1987 in Montalcino, where he settles and starts working for some well known wine productors like Case Basse, Poggio Antico and Ciacci Piccolomini d’Aragona. He extends his activity and collaborates with prestigious companies in Tuscany and across the most important regions in the territory thanks to his successful personal achievements. In 1999 Roberto Cipresso founded Winemaking, a group of agronomic and oenologic consultancy that today counts with a team of selected technicians that work for more than thirty companies throughout the Italian territory.

His carrier counts with collaborations with foreigner companies such as the prestigious Achaval-Ferrer Winery - in the past - and Matervini in Argentina, and the project Bueno Bellavista in Brasil. Recently he started a new collaboration with Vinos de la Luz in Argentina and Spain, fulfilling his dream of working with the Tempranillo variety.

He is the founder of La Fiorita winery, located in the heart of Montalcino; he's the owner of a a vineyard of three hectares, one of which is grown in Brunello vines, near his Resort of Poggio al Sole. He is also the founder of the Winecircus project, a wine cellar and laboratory. Thanks to the particular vines that he counts with and thanks to the experimental cellar, Winecircus is dedicated to research and to the different aspects of the vine activity in collaboration with the Universities of Padova, Venezia, Palermo,Torino, Pisa and Udine. Now Winecircus is set in a big new cellar at the entrance of Montalcino. He works in Winecircus with his brother Gianfranco and his friend Santiago Achaval.

Roberto Cipresso participates frequently as speaker in technical – scientific conventions nationwide and internationally. In 2000, during Jubilee, he created a special Cuvée for the Pope John Paul II. One of the most important recognitions received during his professional carrier is as Best Italian Oenologist during the “Wine Oscar 2006”. In 2008 Men’s Health Magazine voted Roberto Cipresso “Man Of The Year” in food category.

His three books, “Il Romanzo del Vino”, “Vinosofia” and “Vineide”, written in collaboration with Giovanni Negri, were published respectively in September 27th 2006, October 12th 2008 and in September 23rd 2009.
In 2009 Wine&Spirits declares Bodega Achaval Ferrer “Best Wine Cellar of The World”.
In April 2010 he met Italian Republic President, Giorgio Napolitano, and was asked by “Città Del Vino” to develop a special wine for the 150th Anniversary of Italian Unification. In 2011 Robert Parker, patron of The Wine Advocate, awards Cipresso’s five wines with one 99/100, three 98/100 and one 97/100. During 2012 Brunello di Montalcino Riserva 2006 La Fiorita, 95/100 Wine Spectator rating, is listed as one of the Best 50 Wines in Italy during the Best Italian Wines Awards 2012 and received the Gold Medal at the “Merano Wine Festival 2012”. Roberto Cipresso ranks in the “Top 10 Wine Spectator 2012” with his Finca Bella Vista 2010, Bodega Achaval-Ferrer in Mendoza.
The Finca Altamira 2013 is among the 10 Best Wines of 2016 by Forbes.

The 21st January 2013, Roberto Cipresso perform at the School of Enology in Conegliano Veneto the Lectio Magistralis entitled:"The vine and wine in 25 years of experience." During the the same year, on June 20th, at the Master of Food and Wine managed by the University of Venice "Ca' Foscari" he did a lecture entitled: "The old and the new world of wine." The 3rd October 2013, at the Embassy of Argentina in Monte Carlo, Roberto  did a lecture about his own work experience in the wine-growing of Mendoza.

July 30, 2014, Roberto became a member of the Scietific Committee of Ente Vini - Enoteca Italiana.

December 16, 2014, at Palazzo Strozzi, La Quadratura del Cerchio meets Pablo Picasso and Cubism, exclusively for guests of Cathay Pacific Airways.

January 19, 2015 - in collaboration with University of Udine and prof. Roberto Zironi, at the wine school of Conegliano Veneto - Roberto Cipresso did a "Lectio Magistralis" entitled: "History of Vine and Wine".

During 2015, Wine Spectator honors Brunello di Montalcino 2010 La Fiorita with 95/100 rating; at Merano Wine Festival 2015 Roberto take part, with 10 of his best wines, in the prestigious selection of Cult Oenologist.

In 2016, Roberto, with his brother Gianfranco, founds the project Cipresso 43: wines from native vines produced along the same Parallel, but in front of two different seas - Adriatico e Tirrenico -.



Cecilia Pianigiani

 

Cecilia Pianigiani pursued an undergraduate degree in Agricultural Science and Technology at the Faculty of Agriculture, University of Perugia. In February 2004, she obtained her PhD in Agricultural Science and Technology earning a first-class degree. Her thesis was on the "Vegetative and Productive Behaviour of Quality White Grape Vines in the Area of Corbora" (a DOC Orvieto Classico region).
As part of her doctoral work, she did a training period at the Faculty of Agriculture, University E. Mondlane in Maputo, Mozambique. Since 2004, she has worked with Winemaking.
She edits the agronomic and oenological reports made by Winemaking technicians for clients and does laboratory tests during the pre-harvest period. She is also responsible for public relations with businesses and the press, produces the company newsletter, and organises seminars on technical and scientific subjects.



Emanuele Serafin

 

Born in Conegliano Veneto the 5th October 1984, Emanuele still lives in the heart of the hills on the famous DOCG Conegliano-Valdobbiadene, homeland of Prosecco wine. Attended the six-year course at the prestigious School of Oenology in Conegliano, he enrolled immediately for the Bachelor of Science in Viticulture Oenology (at the historic University of Padova); meanwhile he collaborated with some private company, allowing to pay in his studies.
Already in 2003 he worked effectively with the most important Center of Microvinification in Triveneto zone which is situated just a few steps from the School of Oenology; in 2008, after his degree, becomes winemaker and he follows during the same year some reserch and projects at the Microvinification Centre. While continuing the collaboration with private companies, he can make wine with his own hand with all the old varieties of Veneto region recovered during the last 25 years, to test innovative methods of drying and creation of dessert wines made up by international and indigenous varieties, to deepen the classic re-fermentation in the extreme conditions about local and classic wines, to experiment different phases of new distillations in vacuum atmospheric situation, and finally to bet about the peculiarities of new viticulture and oenology in the Belluno zone (Pre-Alpine area); Emanuele firmly believes in the upgrading of the grape vines and fruit in the area of Caneva-Fregona, near Belluno.
